Cheesy Corn Casserole
Mmmm, this is one of my favorite side dishes, along with green bean casserole. I usually pair this with chicken-fried chicken or with turkey meatloaf, and it is so good! It’s cheap, too, with all of the ingredients costing under $5 total! Awesome! It takes just over an hour and yields 6-8 servings.
1 can (15.25 oz) whole-kernel corn, drained
1 can (15.25oz) creamed corn
1 package Jiffy corn muffin mix (8 oz.)
1 cup sour cream
1/2 stick butter, melted
1.5-2 cups shredded sharp cheddar cheese
Preheat oven to 350 degrees F.
In a large bowl, mix cans of corn, Jiffy corn muffin mix, sour cream, and melted butter.
Pour into a greased baking dish (9×13″). Place in oven, bake for 45 minutes.
Remove from oven and cover with 1.5-2 cups sharp cheddar cheese, shredded. Return to oven and bake an additional 5 to 10 minutes, until cheese is melted.
Allow to cool for 5 minutes, then enjoy!
