Autumn Three-Bean Turkey Chili {Slow Cooker Recipe}

Happy Autumn to all! I’ve been celebrating Autumn since September 1, even though I know it isn’t officially Autumn until, well, TODAY! Can you tell I’m excited?!

One of my favorite things about Autumn is how cozy everything seems to get. We bring out decorations, light more candles, dust off the comfy sweaters, watch our favorite shows and movies, and we bake. Oh, so much baking. I love to cook and to bake, so I’m going to be sharing some recipes with you (old favorites and new ones I’m trying out) so we can share in the love of cooking together!

Today, I thought I would share one of the favorite recipes in our house: three-bean turkey chili! It’s a slow-cooker recipe, which helps make the recipe easy, and it’s super affordable! Plus, it’s delicious!

Without further ado, here’s the recipe!

Ingredients

2 tsp olive oil

1/2 to 1 small yellow onion, chopped (we use half of an onion but we aren’t big onion fans, so if you love onion, go ahead and use the whole thing!)

5-6 mini sweet bell peppers (orange and yellow) OR two large sweet bell peppers, chopped

1 pound ground turkey meat

Two 15 oz. cans tomato sauce

Two 15 oz. cans petite diced tomatoes, drained

One 15 oz. can chili beans

One 15 oz. can black beans, drained

One 15 oz. can dark red kidney beans, drained

One 15 oz. can sweet corn, drained

1 tbsp. cumin

1 tbsp. chili powder

Optional toppings: shredded cheese, sour cream, sliced olives, or jalapeños. Note: We also love to have krusteaz honey cornbread mini muffins with this recipe!

Directions

One | Heat olive oil in large pan on medium heat. Add onions and peppers and cook for about three minutes, then add turkey and cook until browned. Add to slow cooker.

Two | While the meat is cooking, open cans and drain sweet corn, petite diced tomatoes, black beans, and dark red kidney beans. Add all cans to slow cooker.

Three | With all cans and turkey/veg mixture added to the slow cooker, add cumin and chili powder, then stir together.

Four | Cook with the slow cooker on HIGH for four hours or on LOW for 6 hours.

Five | Serve warm with as many toppings + extras as you desire, and enjoy!
